Night Market Air Fryer Chicken Wings

This is my version of Cantonese salt and pepper wings that are usually deep fried. As much as I love the taste of deep-fried foods, I hate the mess it creates. These air-fried wings are just as crunchy without the mess or the extra calories of deep frying.

INGREDIENTS
  • 2 lbs. chicken wings, drumettes and wings separated
  • 4 Tbs. vegetable oil, divided
  • 1 cup potato starch
  • 2 green jalapenos, thinly sliced
  • 4 garlic cloves, peeled and thinly sliced
  • cooking spray

DIRECTIONS
  1. Place chicken in a medium mixing bowl and add 2 Tbs. vegetable oil and 1 Tbs. plus 2 tsp. Night Market seasoning. Stir to make sure everything is evenly coated and place bowl in refrigerator to marinate overnight.
  2. Place potato starch in medium mixing bowl and add chicken. Toss to make sure chicken are evenly coated. Transfer chicken to a baking sheet, making sure to shake off excess potato starch. Coat both sides of the chicken wings with cooking spray.
  3. Preheat the air fryer to 400F for 3 minutes. Place chicken in a single layer in the air fryer, making sure not to crowd it too much. Cook for 15 minutes, making sure to flip the wings over halfway through the cooking time. Transfer cooked wings to a sheet pan with a baking rack set on top. Depending on the size of your air fryer, you may have to do this in several batches.
  4. About 7 minutes before the last batch of wings is finished, place remaining 2 Tbs. vegetable oil, jalapenos, garlic, and remaining teaspoon of Night Market seasoning in a cold non-stick pan. Place pan on stovetop and turn heat to medium-high. Cook for 5-7 minutes, or until jalapenos are softened and garlic is golden. Add cooked chicken wings and toss to combine. Transfer chicken to a platter and serve.
